3673. chicken finger sandwich with bacon and blue cheese mayo

What’s in it? I get the hoagie roll and the chicken fingers from Publix. Mix a quality Mayo with a quality blue cheese. (good mayo and good cheese is worth paying top dollar) Put the blue cheese mayo on both sides of the hoagie. Put the bacon on the sandwich. ( I use turkey bacon without nitrates because I don't eat pork)

What should we know? The publix hoagie is great for this sandwich because, for some reason, it tastes like pretzels. :) …and the publix chicken fingers are also great in this sandwich because they don't have too much seasoning and the chicken is of good quality. They don't take away the flavor of the awesome blue cheese mayo! (SPEND THE MONEY ON GOOD CHEESE AND MAYO) :)

3682. Egg and anchovy supreme

What’s in it? Home-made egg mayonnaise (see below) and anchovy fillets (from those small tins/jars you get in all supermarkets)

What should we know? To make the egg mayonnaise: Hard-boil some eggs (I normally do half a dozen at a time). When shelled, put the eggs in a bowl and add a 50:50 mixture of mayonnaise and salad cream (any type will do) - quantity depends on how sloppy you like it. Add a dollop of English mustard and black pepper to taste. With a sharp knife chop around in the bowl until the contents are well mixed and the eggs pieces are of the desired size. Spread onto the bread and layer with anchovy fillets to taste. Pure, unadulterated heaven. The saltyness of the anchovies is perfectly offset by the sweetness of the salad cream. Also good with chopped raw onion and/or tomato.

What’s in it? butter, mashed potato, gravy, marrowfat or mushy peas, salt and pepper, worcester sauce

What should we know? All ingredients should be cold, leftovers. There's two variations on this sandwich - the Elvis and the standard. For standard, generously butter the bread and sandwich a thick layer of mash topped with gravy, marrowfat peas (mash them in with a fork). Season and splash with worcester sauce. For the Elvis version, butter both sides of the bread, make the sandwich as above, then fry in a hot pan.
